Ingredients

    Lemons, 1 fruit without seeds, chopped
    Garlic, 1 clove, chopped (or more to taste)
    Green Tomatoes, 5 cup, peeled and chopped
    Brown Sugar, 2.5 cup, packed
    Raisins, 1.5 cup, packed
    Ginger Root, 0.25 cup, chopped
    Cider Vinegar, 2 cup
    *Peppers, sweet, red, fresh, 2 large (2-1/4 per lb, approx 3-3/4", chopped
    Onions, raw, 1 cup, chopped
    Pepper, red or cayenne, .25 tsp (or more to taste)
    Spice bag of:
    2 cinnamon sticks
    30 cloves
    1 tsp. coriander seeds

Directions

Makes 3 pints - 96 1 Tbsp servings, 16/ cup, or 32/ pint.

Simmer all the ingredients 5 minutes and remove spice bag. Continue to simmer 2 hrs until sauce has thickened. Put boiling hot chutney in hot sterile jars and seal. Process 15 minutes in boiling water bath, for pints.
