Apple Spice Muffin

Introduction

Recipe came from Jack LaLanne power juicer recipe booklet. Recipe came from Jack LaLanne power juicer recipe booklet.
Number of Servings: 14

Ingredients

    1 1/2 c. unbleached flour
    1 1/2 c. apple pulp
    1/4 c. apple juice
    1/2 c. whole wheat flour
    2/3 c. honey
    2 t. baking powder
    1/4 t. salt
    1/4 t. cinnamon
    1/2 c. skim milk
    2 egg whites

Directions

Oven 400 degrees. Mix One: Combine 1/2 c unbleached flour, apple pulp, & apple juice. Mix Two: combine 1 c. unbleached flour, whole wheat flour, honey, baking powder, salt, cinnamon, & egg whites. Combine the 2 mixes until moist. Bake 400 for 25 mins...I have a convection oven so it only took 15 minutes. Also, these are a chewy muffin. Great w/ a T. of peanut butter.

  • I got this recipe book with my juicer as well and have made them too! I do a vegan variation substituting agave nectar for honey, almond milk for milk, and egg replacer for the eggs. It's still delicious! - 2/4/13
