Ground Turkey Cacciatore

Introduction

Here's a twist on the traditional cacciatore recipe with lots of flavor, but a lot less fat! Here's a twist on the traditional cacciatore recipe with lots of flavor, but a lot less fat!
Number of Servings: 5

Ingredients

    Olive oil cooking spray
    1 ˝ cups chopped tri-color peppers
    Salt, Pepper, Garlic Powder, Onion Powder
    Chicken Stock
    1 lb ground turkey, 99% lean
    4 Tbs worcestershire sauce
    1 tsp crushed red pepper
    1 - 14.5 ounce whole or crushed tomatoes
    1 tsp dried oregano
    1 tsp dried basil
    2 pinches sea salt

Directions

Spray large skillet with cooking spray. Heat to medium high heat. Add peppers and season. Sauté for approximately 5 minutes, adding a little chicken stock to the pan as the pan dries and allow to evaporate. Remove peppers and set aside. In the same pan, add ground turkey and season with same seasoning, add Worcestershire to the meat. Cook until no longer pink, approximately 10 minutes and add crushed red pepper flakes. Return peppers to the meat mixture along with undrained tomatoes, breaking them up as they heat. Sprinkle with oregano and basil and add salt. Makes 5 servings. Serve with “Rosemary Potatoes”
