Introduction

Number of Servings: 8

Ingredients

    4 cups macaroni cooked
    1 cup frozen corn
    1 -19 oz.can stewed tomatoes
    1 medium onion chopped
    2 oz cheddar cheese
    1 oz mozerella cheese
    2 tbsp butter
    Salt and Pepper to taste

Directions

Combine all ingredients in a casserole dish. Bake in 350 degree oven for 30 minutes. Makes 8 3/4 cup servings

    Well, a little less onion would be good and I added some cumin. Overall I thought this was very good and much healthier than many casseroles I've found. Thank you for this recipe! - 5/25/11

  • I made this for my boyfriend and I; it was absolutely delicious! I was very surprised. It does not taste like it would be healthy. I used crushed tomatoes instead of stewed and it still turned out amazing. It makes a lot, so I froze a bunch! - 10/3/11

  • This reminds me of the mac and cheese my mother-in-law used to make and had forgotten about. I made a few changes. I added ground cumin - 1 teas and 8 ounces of ham. Add 51 calories, 3 g fat, 16 mg cholesterol 268 mg sodium and .9 g carb. to totals. Make a very filling meal with a salad on the side - 12/13/10

    I am in the process of making this right now! I'm really excited! Instead of macaroni, I used whole wheat penne and whole wheat rotini pasta. Also, I added some chopped celery.. I can't wait to taste it!! - 1/2/08
