Spinach & Mushroom Quiche

Introduction

Easy no crust quiche. This does not require baking mix. Yes, real men do eat quiche. I put 1 cup chopped cooked ham on one half of the quiche and serve my husband that side of the quiche. Ingredients

    1 c. frozen chopped spinach, thawed and squeezed dry
    1 c. sliced mushrooms
    4 oz. chopped onion
    4 oz. grated cheese (cheddar and mozarella calculated)
    1 c. 1% milk
    4 large eggs
    1 tsp. salt
    1/8 tsp. pepper
    2 tbsp. oil
    4 tbsp. flour
    1 tsp. baking powder

Directions

Spray 9-inch pie plate with vegetable spray. Add drained spinach and mushrooms. Sprinkle with onion, and cheese. Place remaining ingredients in blender, whirl 15 seconds. Pour over vegetables and cheese. Bake at 375 degrees for 20 to 25 minutes, or until knife comes out clean. Let stand 5 minutes before cutting. Makes 4 servings.
