Greek Rice Salad

Introduction

Ingredients

    Cooking Spray
    1/2 cup sliced mushrooms
    Salt & Pepper
    2 oz Cooked cubed chicken
    1/2 cup chopped tomatoes
    1/3 cup cooked brown rice
    5 small black olives rinsed and sliced
    1 oz fat free feta cheese
    1 cup chopped romaine lettuce
    Lemon juice

Directions

Coat cooking spray into the bottom of a large skillet. Heat pan to medium heat. Cook mushrooms until warmed and releasing some of their juices. Season lightly with salt & pepper. Add cooked chicken to the pan and heat through, approximately 3 5 minutes. Add tomatoes just until they release their juices.
Place chopped romaine on plate and put rice on top of lettuce. Remove chicken mixture from the skillet and place atop the rice. Top with black olives and feta. Squeeze lemon juice from half of lemon on entire dish.
Serve with 15 small grapes.
