Mediterranean Fish

Introduction

Number of Servings: 6

Ingredients

    3 tablespoons olive oil, divided
    1/2 cup chopped onion
    3 garlic cloves, minced
    1 (10 ounce) can crushed tomatoes
    1/2 cup dry white wine
    1/2 cup chopped fresh parsley
    1/4 cup capers, drained
    1 teaspoon chopped fresh rosemary or 1/2 teaspoon dried rosemary
    1 teaspoon chopped fresh oregano or 1/2 teaspoon dried oregano
    1/4 teaspoon dried crushed red pepper
    6 (4-ounce) Salmon fillets
    2 tablespoons dry white wine
    2 (4-ounce) packages crumbled reduced fat feta cheese

Directions

1. Heat 2 tablespoons oil in a large skillet over medium-high heat. Add onion and garlic, and saute' 2 minutes. add tomatoes and next 6 ingredients to skillet. Bring to a boil; reduce heat, and simmer, uncovered, 10 minutes.
2. Pour remaining oil into a 15X10 inch jelly-roll pan, and tilt to coat bottom. Place fish fillets in a single layer on pan. Pour tomato mixture over fish. Bake, uncovered, at 450 degrees for 15 minutes. Drizzle with white wine. Sprinkle with cheese, and cook 8 more minutes or until cheese begins to melt.
