Ingredients

2 cans black beans
16 oz jar salsa
1/2 cup brown rice (uncooked)
1 lb chicken breast
Directions
Place frozen chicken breasts in slow cooker.
Pour beans, rice and salsa over chicken.
Cook low 8-10 hours and serve.

OMG, this was sooooooo good! I also added 1 1/2 tsp of cummin, 1/2 fresh lime, 16oz sweet white corn. I mix all the ingredients together in lge bowl. I cut up the chicken breast and placed in the bottom of the crockpot, then added the mixture and it turned out fantastic. My DH couldn't get enoug - 10/5/09

Easy to make and tastes good. Next time I'll use a little less rice. I shredded the chicken before serving to distribute it more. Had lots of leftovers. Froze part, rest I wrapped in whole-wheat tortillas, poured on some enchilada sauce, sprinkled on a little cheese, baked until cheese melted. Yum! - 11/4/09

This recipe was YUMMY! I shared some with my mom and she was going on and on about it. I actually didn't use the slow cooker, though; I put it in the oven (because I forgot that it was a slow cooker recipe...LOL!). It was still delicious, and I will definitely be making this again. SO good! Hubby, 2 young kids and myself loved this! Made my own salsa since I didn't have any jarred which made more than 16 oz, but I also added more chicken, maybe 1.3 lbs. Didn't drain beans either. Put in the crockpot on low for 8.5 hrs- chix SO tender! With jar salsa, 5 min prep only! GREAT!!! - 3/8/08

I just made this recipe. I love it! I shredded the chicken so it's almost like a stew, plus like a lot of others I added corn. I also didn't have any salsa so I used a can of crushed tomatoes, added and onion and some hot sauce. So good, so easy, so healthy, so cheap. Who wouldn't love that. - 1/11/10

Doesn't get much easier than this--plus it was tasty and nutritious. The ingredients are staples in my pantry, so I know I will definitely be making this recipe again--although, just as other members did, I may substitute or vary some of the ingredients depending on what I have on hand to use. - 10/28/09

This recipe was delicious and very easy to make. I made 1/2 the recipe. I also drained and rinsed the beans and added fresh salsa instead of the jarred. The taste was delicious - even my husband (who is a meat and potatoe guy) loved it! I will add this recipe to my favorites and will make it again - 1/29/10

I make something similar to this. However, I rinse my kidney beans(reduces sodium) & instead of rice, I put in a bag of frozen corn(a smidge less carbohydrates) Plus I use my homemade salsa (which really reduces the caustic food chemicals). I just made this 3 days ago, leftovers yesterday was better - 9/23/09

I made this and it was great....added a wee bit of kick by using medium salsa and some chilli spice...but what was better was the next day turning it into soup by adding carrots and celery and green peas with extra chicken broth...will make again and again with two we got three meals from this. - 2/1/10

This was soooo good that I almost exceeded my calorie count. I did't have chicken breast so I substituted 4 lean bone-In Pork Loin Chops it turned out great. I reentered each item to get a more accurate nutritional count with the Pork. Can't wait to warm up the left overs. A no brainer to make. - 2/1/10

Curious - is this for a single chicken breast or one breast per person? It is just husband and me and we have a bad habit of being unable to do left overs ;) If the calorie rating is for a higher number of people - 6 chicken breasts for 6 people - we can likely do this by just putting in less..? - 7/10/08
