Fruity Chicken Salad

Ingredients

    4 Tbs fat free mayonnaise
    1 no calorie sweetner packet
    1 Tbs white wine vinegar
    1/4 tsp lemon pepper seasoning
    4 oz chopped cooked chicken
    1/2 cup chopped carrots
    1/2 cup chopped cucumber
    15 small grapes, cut in half
    1 small apple, cored and chopped

Directions

In a medium bowl, mix together mayo, sweetner, vinegar and seasoning. Add chopped chicken and stir to combine. Add vegetables and fruit and mix well.

Put over chopped romaine lettuce or on sandwich thins.

Serving Size: Makes 2 servings
