Ingredients

Edamame (approx 1.5 cups), shelled and cooked
1 can garbanzo beans
1 can black beans
1 can great northern beans
1/4 cup olive oil
1/3 cup cider vinegar (or can substitute any other vinegar)
Directions
Rinse and drain all beans. In a small bowl, whisk together oil and vinegar. Pour dressing over beans and refrigerate at least 3-4 hours before serving.
Note: olive oil will congeal after refridgeration; set out for approx. 20 minutes and stir well before serving.
Makes approximately 8 3/4 cup servings
