Amanda's Southwestern Edamame Salad

Introduction

Delicious summer snack! Delicious summer snack!
Number of Servings: 8

Ingredients

    *Great Value Golden Sweet Whole Kernel Corn, no salt added, 1 can
    Archer Farms Mukimame steam in the bag shelled edamame, whole bag
    Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia)
    Red Ripe Tomatoes, .5 cup cherry tomatoes-chopped
    Jalapeno Peppers, 1 pepper
    Lime Juice, 2 lime yields
    *Extra Virgin Olive Oil, .5 tbsp
    2 scallions

    Spices: 1/2 tsp salt, 1/2 tsp cumin, 1/2 tsp chipotle powder, 1/2 tsp dried cilantro


Directions

Pop edamame bag in microwave (use bag instructions)

Drain and rinse corn

Chop tomatoes, bell pepper, scallions, jalapeno and combine with corn

Add edamame to veggie mixture

Squeeze limes, drizzle olive oil, add spices and CHILL!
