Thai Peanut Soup

Introduction

Makes a spicy, thai-inspired chicken peanut soup. Makes a spicy, thai-inspired chicken peanut soup.
Number of Servings: 2

Ingredients

    1 chicken breast
    1/2 TB Peanut Butter & Co. The Heat is On Peanut Butter
    2 TB coconut milk
    1 tsp Ginger People ginger juice
    1 cup chicken broth
    1 tsp miso
    1 tsp toasted sesame oil
    1 TB scallions
    1 package of Tofu Shiratake

Directions

Roast chicken breast in oven. Cut into bite-sized pieces; set aside.

Put broth, coconut milk, ginger juice, scallions and PB in a medium-sized pan. Bring to a boil; turn down heat and allow to simmer until reduced by 1/4. Put some stock in a small cup with miso and stir until miso is dissolved; add back to pot, along with the chicken and cook for 2-3 mins.

Rinse shiratake noodles thoroughly and add to soup. Cook for a few more minutes, then serve with 1 tsp toasted sesame oil.

Serving Size: 2 servings of soup.
