Sarah's Veggie Lasagna

Introduction

This can easily be altered to your liking. The original recipe I got the inspiration from was an eggplant lasagna but I don't like eggplant so I changed it up and added ricotta, zucchini and more spinach and mushrooms. I almost might add some chicken or lean turkey burger to it. This can easily be altered to your liking. Number of Servings: 1

Ingredients

    6 tablespoons marinara sauce
    1/2 cup sliced fresh mushrooms
    1/2 cup frozen spinach, thawed
    1/2 cup zucchini, sliced
    2 tablespoons part skim ricotta
    4 tablespoons part skim mozzarella

Directions

Make two layers in a small dish (Iike the single serve corningware dishes) in the following order, each:
Bottom
3 tablespoons marinara
1/4 cup sliced fresh mushrooms
1/4 cup frozen spinach, thawed
1 tablespoon part skim ricotta (disburse evenly in small dollops over the layer)
2 tablespoons part skim mozzarella

Cook in a 400 degree oven for 30 minutes. Let cool for 10 minutes before eating. Enjoy!
