Chopped Veggie Salad

Introduction

Cutting all the veggies to the same size is the key to this salad - a summertime taste sensation. Cutting all the veggies to the same size is the key to this salad - a summertime taste sensation.
Number of Servings: 6

Ingredients

    2 cups English cucumber, chopped
    1 cup red bell pepper, chopped
    1/2 cup green bell pepper, chopped
    1/2 cup red onion, chopped
    1/2 cup fresh parsley, chopped
    1/2 tsp. salt
    1/4 tsp. ground black pepper
    2 T red wine vinegar
    1 T extra virgin olive oil

Directions

Chop all vegetables into small pieces and combine in med. glass bowl. Sprinkle with salt and pepper then add red wine vinegar and olive oil. Stir to combine.


Makes 6 servings, approx. 3/4 cup per serving.
