Crockpot Posole

Number of Servings: 10

Ingredients

    3 cans (15 oz.) hominy drained
    3 cans (10 oz) green enchilada sauce
    1 large onion, chopped
    2-3 cloves garlic
    2 tsp. cumin
    1 tsp. salt
    1/2 tsp. pepper
    2 cups chicken low sodium broth (or 14 oz. can)
    2 lb. (recipe says 2.5 lb) pork loin roast
    fresh green chilies (I guesstimated .2 oz)
    1 can black beans


    Optional toppings

    1/2 cup snipped fresh cilantro
    2 Tbsp. lime juice
    Sour Cream

Directions

Mix everything except pork and toppings in the crock pot. Add pork and spoon mixture over the top. Cook on low for 7-9 hours. If using pork, take out and it should shred easily. Put back into soup mixture. Serve with tortillas, tortilla chips or over rice. Top with toppings of your choice.

Makes about 10 1 1/2 cup portions

    This is delicous. I used a 3lb pork loin and two 30oz cans of hominy. Also used an extra can of chicken broth. Delish! - 1/2/11
