Fish-Orange Roughy

Introduction

Got this during a cooking demo with a personal trainer ... first time trying Orange Roughy and it was DELICIOUS!! Got this during a cooking demo with a personal trainer ... first time trying Orange Roughy and it was DELICIOUS!!
Number of Servings: 1

Ingredients

    6oz Orange Roughy Fillet
    1T Cajun Spice
    10 spears Asparagus, med
    1/2cup Mango, chopped small
    1/2cup Pineapple, chopped small
    2t Red Bell Pepper, chopped
    2t Red Onion, chopped
    1 dash Salt
    1 dash Pepper
    1t Cilantro, FRESH, chopped
    1/2 Lime, juiced (just need juice)
    1/2t Jalapeno, chopped

Directions

Rub fish with cajun seasoning and cook in a skillet (spray with cooking spray OR small amount of olive oil).

Asparagus: Boil water. Add asparagus for 2 minutes, remove and place in fry pan for 2 more minutes. (or steam for 5 minutes in microwave)

In separate bowl: combine remaining ingredients.

Place Asparagus spears on plate, add mixture from bowl, then place fish on top ... ENJOY!!
