Almond Flour Muffins

Introduction

Low-Carb Muffins Low-Carb Muffins
Number of Servings: 12

Ingredients

    2 cups Almond Flour (ground almonds)
    2t baking powder
    1/4t salt
    1/3 cup butter
    4 eggs
    1/3 cup sugar (or Splenda)
    1/3 cup water,
    2t cinnamon
    2t vanilla

Directions

Preheat oven to 350'. Spray 12-Muffin Tin. Melt butter.

Mix dry ingredients together. Mix wet ingredients together, then pour into dries and mix very well. Fill each muffin cup 1/2-2/3 full. Bake 15 minutes, or until knife inserted into middle comes out clean.

Suggested additions: 1 cup berries, 1t jelly per muffin, 1/2 cup cocoa powder, mashed banana, applesauce. Butter can be reduced to 1/4 cup, and sugar can be replaced with Splenda.
