Chicken Salad with Grapes and Mandarin Oranges

Introduction

This is a light simple salad for a brunch. You can serve a mound on a lettuce leaf or roll it up in a wrap. This is a light simple salad for a brunch. You can serve a mound on a lettuce leaf or roll it up in a wrap.

Ingredients

    4 cups chicken breasts (bone and skin removed), cooked, chilled, and diced
    1 1/4 cup seedless green (or red) grapes, each cut in half
    1 1/2 cup chopped celery
    1 cup canned mandarin oranges (drained)
    3/4 cup mayonnaise
    salt and pepper to taste

Directions

Mix diced chicken, grapes, oranges, celery, and mayo together. Add salt and pepper as needed. Chill.

Makes 16 servings -- about 2/3 cup each.
