Introduction

Number of Servings: 2

Ingredients

    8 oz. ground chuck
    2-4 Tbs. Wondra Flour, enough to form a thick roux
    2 c. non-fat milk
    1/2 tsp. or to taste Cajun seasoning
    1/4 tsp. or to taste red pepper flakes
    4 slices of whole wheat bread

Directions

Crumble beef in iron skillet and cook on a medium flame while stirring. Once the meat is browned add Wondra flour to the undrained fat and stir until it forms a thick roux. Slowly stir in two cups of non-fat milk. Season to taste with Cajun seasoning and red pepper flakes. Lower heat to low/medium flame, and stir occasionally until mixture is reduced by half. Meanwhile, toast the bread and arrange on plates. Once the creamed beef is done, then pour over toast.

Serving Size: Makes two hearty servings or four small portions
