Italian Chicken Stew

Introduction

This hearty stew is sure to ward off the chills! This hearty stew is sure to ward off the chills!
Number of Servings: 12

Ingredients

    2 lbs boneless skinless chicken breast, cubed
    1 clove of garlic, minced
    2 tsp crushed basil
    2 tsp dried rosemary
    1/2 tsp black pepper
    2 tbs olive oil
    8 Roma tomatoes (about 2 lbs), diced
    6 cups chicken broth
    6 white potatoes, peeled and chopped
    3 carrots, peeled and sliced
    3 celery stalks, sliced

Directions

1. Heat olive oil in large soup pan over medium heat. Add chicken, garlic, basil, rosemary, and pepper. Cook chicken, stirring occasionally, about 7-10 minutes, or until no longer pink.

2. Add tomatoes. Bring to boiling, reduce heat and simmer 10 minutes, stirring occasionally.

3. Add chicken broth. Bring to boiling, reduce heat and simmer 45 minutes.

4. Add potatoes, carrots, and celery. Bring mixture to a boil, reduce heat and simmer additional 40-60 minutes.

Alternative crockpot method:

Reduce chicken broth to 3 cups

1. Heat olive oil in skillet over medium heat. Add chiken and spices. Cook 7-10 minutes, until meat is no longer pink. Transfer to crock pot.

2. Add remaining ingredients to crock pot. Cook on low 4-5 hours, or high 2 1/2 to 3 1/2 hours.
