KIST'S Edamame Hummus

Introduction

This makes a great spread for veggie sandwiches. This makes a great spread for veggie sandwiches.
Number of Servings: 20

Ingredients

    1 1/2 cups frozen, shelled edamame beans
    1/4 tahini
    1/4 water
    1/2 freshly grated lemon zest
    1 lemon juiced (about 3 tablespoons)
    2 garlic cloves, smashed
    3/4 teaspoon kosher salt
    1/2 teaspoon ground cumin
    1/4 ground coriander
    2 tablespoons olive oil
    1 tablespoon fresh parsley

Directions

Boil beans in salted water for about 8 minutes, or until soft. In a food processor, puree the edamame beans, tahini, water, lemon zest and juice, garlic, salt, cumin and coriander until smooth. With the motor running, slowly drizzle the olive oil until blended. Transfer to a small bowl, stir in the parsley.

Serving Size: 20 15ml (1tablespoon) servings
