Quick easy comfort food. Great with a tossed salad or steamed veggies. Broccoli is my favorite accompaniment, since you can dunk it in the creamy cheesy sauce! Quick easy comfort food. Number of Servings: 4

Ingredients

    1 1/2 to 2 cups cooked diced ham
    1 onion, chopped
    2 cups chopped mushrooms
    2 teaspoons butter
    1 can low-fat condensed mushroom soup
    1/2 can water (less or none if the soup is fairly liquid)
    1 cup grated cheddar cheese
    1/2 cup dry sherry
    1 tablespoon chopped parsley
    12 ounces pasta, any shape (I prefer bow ties or rotini)

Directions

Cook pasta. Brown ham and onion in some butter for about five minutes. Add mushrooms and continue cooking 5-10 minutes. Blend in condensed soup, water, sherry, cheese, and parsley. Cook over low heat until cheese melts; stir often. Serve over pasta.

Needs the sherry, so don't be tempted to leave it out!

Serving Size: Makes four one-cup servings of sauce, plus 2 oz pasta per serving.
