Low fat, high fibre soup Low fat, high fibre soup

Ingredients

    1 onion
    1 carrot
    200g red lentils
    1 400g tin tomatoes
    1.5lt vegetable stock

Directions

sweat onion and carrot for 5 mins, add lentils tomatoes & veg stock & cook for 40 minutes or until tender
Liquidise if smooth soup preferred
