Sauce Pois

Introduction

Ingredients

    3 cups of red kidney beans
    Salt to taste (1 tbsp)
    A little olive oil (1/2 tbsp)
    Chicken broth (3 cans of 10 oz)
    or Powdered chicken stock with water

Directions

I make this in a slow cooker because it takes a while on the stove.

In the morning before work, I put the dry beans in my slow cooker with water almost filing it up to the top. I add a little salt to taste and a little bit of olive oil.

I leave it to cook on low all day (8-10 hours).

When I get home at night, the beans are ready. I use my blender to puree the beans. After that I stain the product while I pour it in a medium stock pan on the stove on medium low heat. Then I add my powdered chicken stock with a little garlic powder sometimes. I bring it back to a boil and then when all the flavors are well blended, it's ready to serve.

This can be a soup, but in my culture, we pour it over white rice just like gravy. You can add whatever spices you like to make it your own.

Note

On the stove: You just put the dry beans in a medium stock pan and add water until the pot is almost full (dash of salt and little olive oil). Boil the beans until very soft. This takes about 2 hours.

Be careful how much water you use when ready to blend the beans. Start by adding just enough water to process the beans and then add little by little until the consistency is what you prefer. It should be between thick and watery.
