2 tsp Olive Oil
1 ea Onion, chopped
1 ea Red Bell Pepper, chopped
¾ can Black Beans, drained & rinsed
¾ can Diced Tomatoes, with juice
¾ can Vegetable Broth
2 tsp Chili Powder
1 tsp Ground Cumin
1 tsp Dried Oregano
¼ cup Cheddar Cheese
¼ cup Sour Cream
2. Add the beans and next 5 ingredients and simmer for 20 minutes.
3. Divide into 6 bowls, sprinkle evenly with cheese and dollop of sour cream.
Serving Size: Makes 6 equal servings
