    1 C. COOKED AND DRAINED SPINACH
    1 SLICED JALAPENO
    1 PEELED/CUBED SWEET POTATO
    1 28 OZ CAN DICED TOMATOES
    1.5 C. ISRAELI COUSCOUS
    DRIED BLACK BEANS
    SALT
    PEPPER
    THYME
    BAY LEAF
    1 T. CHIPOTLE POWDER
    1 TSP. DRIED OREGANO

Directions

SWEAT ONION IN OLIVE OIL, ADD CARROT AND JALAPENO UNTIL SOFT. ADD SPICES THEN RELISH/SPINACH/SWEET POTATO/TOMATOES/COUSCOUS/BEANS AND 8 C. OF WATER. BRING TO A SLIGHT BOIL, THEN TURN DOWN TO SIMMER UNTIL SWEET POTATOES ARE TENDER AND BEANS ARE COOKED. MAY ADJUST SEASONINGS AS NEEDED. SERVE WITH DOLLOP OF FAT FRE PLAIN YOGURT OR SOUR CREAM IF DESIRED.
