Mexican Meatball Soup from Sunset Mag.

Introduction

Number of Servings: 4

Ingredients

    Chicken Broth, 5 cup (8 fl oz)
    Egg, fresh, 1 large
    *Jennie-O Extra Lean Ground Turkey, 16 oz
    Carrots, raw, 1 cup, chopped
    Celery, raw, 1 cup, diced
    1.25 tsp cumin
    2 T fresh oregano, divided

Directions

Put chicken broth, carrots & celery into pot
Cover, bring to boil
Meanwhile prepare 1.5" meatballs with rest of ingredients (hold out 1/2 oregano)
Add meatballs to broth mixture with spoon, bring temp to simmer & turn off heat
Cook 8-10 minutes

Serving Size: Makes 4 2 cup servings
