Tomato Cucumber Salad

Introduction

I had some veggies that needed to be used, so I just threw this all together, it turned out fresh and flavorful! I had some veggies that needed to be used, so I just threw this all together, it turned out fresh and flavorful!
Number of Servings: 10

Ingredients

    2 tomatoes, diced
    1 cucumber, diced (peel on)
    1 red onion, minced
    1 large garlic clove, minced
    5 fresh basil leaves, shredded
    1 cup Feta Cheese, crumbled
    3 tbsp Olive Oil
    2 tbsp white wine vinegar
    dash salt and pepper

Directions

Mix all ingredients and enjoy!

I like this in small doses, so I put it as 10 serving. If you want to reduce the fat content, either reduce or remove the Feta Cheese. Removing the Feta Cheese will also make this a vegan meal.
