Vegetarian Spagetti Sauce

Ingredients

    1 Tbsp extra virgin olive oil
    8-9 cups medium tomatoes, peeled
    1/4 minced garlic
    1 1/2 cups, diced celery
    1 cup, diced carrots
    3/4 cup, diced onion
    salt & pepper to taste
    1 Tbsp, crushed red pepper
    1 Tbsp, Italian seasoning
    1 pkg, McCormick Thick & Zesty Spaghetti sauce mix
    1/4 cup red wine
    1 - 6oz can tomato paste
    3 cups water

Directions

Finely chop, celery, onion, and carrots. Heat a large pot with 1 Tbsp extra virgin olive oil. Chop tomatoes and add all ingredients to a large pot. Add red wine, seasonings, 1 can tomato paste and 1 package McCormick Thick & Zesty Spaghetti Sauce Mix; then add 3 cups water. Cook until tomatoes have broken up and sauce has reached desired consistency. You may puree, if need.
