Chicken Tangine

Ingredients

    1 T olive oil
    1 lb boneless, skinless chicken breasts, diced
    2 baby eggplants, peeled and diced
    1 small onion, thinly sliced
    1 lb carrots, thinly sliced
    1 large sweet potato, peeled and diced
    1 T sodium-free chicken bouillon + 2 cups water
    40 g unsweetened dried cranberries
    45 g dried apricots, chopped
    2 T tomato paste
    2 T lemon juice
    2 T unbleached flour
    1 T garlic powder
    1-1/2 tsp cumin
    1-1/2 tsp ginger
    1 tsp cinnamon
    3/4 tsp black pepper

Directions

Heat olive oil in a skillet over medium-high heat. Cook chicken and eggplant until browned.

Put chicken and eggplant on the bottom of a slow cooker. Add onion, carrots, sweet potato, cranberries, and apricots.

Whisk together everything else except couscous and water. Pour into the slow cooker.

Cook on high for 5 hours or on low for 8 hours.

Serve over couscous.
