Introduction

A simple and easy soup, great for a sick day! A simple and easy soup, great for a sick day!
Number of Servings: 4

Ingredients

    4 cups vegetable stock
    1 head of bok choy, cut in half and sliced in thin strips
    1/2 lb. of mushrooms, sliced
    1/2 an onion, sliced
    1/4 lb. of snow peas, thinly sliced
    1 cup of fresh spinach
    2 tsp. soy sauce
    1 tsp. sesame oil

Directions

Simmer the vegetable broth in a large saucepan. Add all the ingredients and simmer on medium-low heat for about 10 minutes, until the vegetable are tender. Season with salt and pepper to taste and serve.
