Paleo Italian Meatballs

Introduction

Low Carb/Paleo/Primal/Gluten-Free friendly meatballs--not low fat! Adjust using ground turkey and turkey Italian sausage if you need to lower fat content. Low Carb/Paleo/Primal/Gluten-Free friendly meatballs--not low fat! Adjust using ground turkey and turkey Italian sausage if you need to lower fat content.
Number of Servings: 22

Ingredients

    1 pound 80/20 ground beef
    3 links Italian Sausage (mild or hot to preference)
    1 small onion, finely diced
    2 cloves garlic, minced
    3 tablespoons almond meal
    2 tablespoons flax seed meal
    1 tablespoon chopped herbs--parsley, thyme, oregano to taste
    3 eggs
    1 tsp salt
    1 tsp black pepper

Directions

In a large bowl, combine all ingredients until well mixed. Scoop and roll meatballs and pan fry or bake at 350 for about 16-20 minutes, until cooked through.

Serve with tomato sauce and spaghetti squash.

Serving Size: Makes 22 meatballs (appx 1.5" diameter)
