Number of Servings: 2

Ingredients

    1 eggplant (or alternatively 2-3 large zucchini)
    100g ricotta
    3 Tbl gorgonzola, crumbled
    2 medium tomatoes, cored & finely diced
    6 oil-free sundried tomatoes
    1 bunch basil, leaves picked

Directions

Cut the eggplant (or zucchini) lengthways into slices about 5mm thick. Arrange on a plate, sprinkle with sale and leave to rest for 40 minutes or until they have released some liquide and softened.

Oil spray a non-stick pan and fry the slices on both sides until golden brown.

Mix the ricotta, gorgonzola, tomatoes & sundried tomatoes together.

Place a couple of basil leaves on one end of each slice of eggplant (or zucchini), top with some of the ricotta mixture and roll.

Serving Size: Makes approx. 16 for starter or main for 2
