3 cups water
4 cups sliced carrots
1/2 cup chopped onions
2 garlic cloves
2 tsp brown sugar
1 bouillon cube (any type - your choice)
1 tsp curry powder
1/4 tsp ground ginger (or grated fresh ginger)
1 1/2 cups milk
Add all ingredients except the milk.
Reduce heat and simmer for 40-45 minutes or until carrots and onions are very tender.
Remove from heat and puree in food processor or blender.
Return to saucepan - stir in milk.
Heat until warm, but not boiling.
Serving Size: 6 1-cup servings
