Cilantro Lime Chicken

Introduction

This is such a refreshing summer treat! I serve it with a bulgur, spinach, and feta salad and it is just right. This is such a refreshing summer treat! I serve it with a bulgur, spinach, and feta salad and it is just right.
Number of Servings: 4

Ingredients

    4 chicken breasts (I use two large ones and cut them in half after cooking)
    1/4 cup lime juice
    1/2 cup cilantro, chopped coarsely
    6 cloves garlic, chopped (I use a garlic press)
    1 Tbsp honey
    1 Tbsp olive oil
    1/2 tsp salt
    1/4 tsp pepper

Directions

1. Place chicken breasts in a gallon-sized ziploc bag (I use the freezer bags since they're sturdier). You can pound them to an even thickness at this point or leave them alone, it is up to you. Lightly fork the chicken to enable it to soak up the mariande better.
2. Add remaining ingredients to bag, close and mix well. Marinate at least 2 hours (I do it overnight).
3. Grill or broil.
