Blueberry Pancakes (vegan recipe)

Introduction

These yummy pancakes are a great breakfast start. You can use frozen blueberries instead of fresh. These yummy pancakes are a great breakfast start. You can use frozen blueberries instead of fresh.
Number of Servings: 10

Ingredients

    1 Cup Whole Wheat Flour
    1 Cup White Flower
    3 Tbsp Sugar
    3 Tbsp baking powder
    1 tsp sea salt
    2 cups soy milk (vanilla or plain)
    3 tbsp canola or safflower oil
    1/2 cup frozen blueberries
    1/2 cup fresh blueberries

Directions

Combine the dry ingredients in a bowl and sift together. Add the soy milk and the oil and mix until smooth.

Ladle onto a hot pancake griddle. Add the frozen blueberris. Cook for 2 t 3 minutes on each side.
Serve with fresh blueberries

Serving Size: makes 10-12 4 inch pancakes
