Introduction

Ingredients

    Kraft Macaroni and Cheese Dinner, thick and creamy 1box
    Shiitake Mushrooms, .2/3 cup dry pieces
    Spinach, washed fresh organic, .6 oz
    Bob's Red Mill TVP, 0.33 cup
    *Cabot 75% Light Vermont Cheddar , 1.5 oz
    1% milk fat organic milk ( can use fat free )
    Butter, 2 tablespoons

Directions

Bring 6 cups of water to boil. Drop macaroni, TVP, Dry shiitake pieces, spinach and boil for 10 minutes. Drain saving liquid for future use as soup broth. On medium heat, in the same pot, melt butter, add milk, cheese mix from the box and stir well. When well blended, drop the Cabot cheddar cheese and mix again till melted. Drop the cooked macaroni mixture and serve hot!

I usually add a little Madras curry (Sambhar) powder OR fresh chopped parsley depending upon my mood , in the cheese mix for flavor.

  • FYI: TVP is a vegetarian meat substitute made from soy, it comes in dried granules and can be used like ground meat when rehydrated. It stands for Textured Vegetable Protein. - 3/16/11
