Sweet Potato BIscuits

Number of Servings: 12

Ingredients

    1 sweet potato
    1.25 lowfat buttermilk
    3.5 flour
    5t baking powder
    4t sugar
    .75t salt
    2/3 cup veg shortening COLD, cut into small pieces
    4T butter COLD, cut into small pieces

Directions

Preheat to 400 degrees
Mix potato and buttermilk till smooth
Combine dry ingredients. Cut in COLD shortening and butter. Add buttermilk/potato mixture.
Dough will be crumbly and dry. Turn out and knead 10 or so times til dough sticks together. Roll out into 6" x 12" rectangle. Cut into 12 biscuits. Transfer to ungreased, insulated baking sheet. Bake until biscuits have risen and edges and bottom are browned (about 14 minutes).
Mix room temp butter with honey for spread, if desired.

Serving Size: makes 12 3" square biscuits
