Southwest Chipotle Black Beans with Rice Soup

Introduction

This is a very hearty thick soup. It can be a complete meal or it can be served with other foods. This is a very hearty thick soup. It can be a complete meal or it can be served with other foods.
Number of Servings: 4

Ingredients

    1 can black beans
    1 can yellow corn
    1 onion, chopped
    2 cloves chopped garlic
    1 can tomatoes
    1 thigh and one leg of chicken, skin and bone removed, cooked
    1 Tablespoon Southwest Chipotle Seasoning (Sam's Club)
    3/4 Tablespoon Ground Cumin
    1 cup cooked brown rice
    Chopped salantro

Directions

Chop onions and garlic.
Remove skin and bone from a thigh and a leg of chicken
Open one can of each: black beans, yellow corn, tomatoes.
Mix all of the above.
Add 1 T. Southwest Chipotle Seasoning and 3/4 T. grown cumin. Heat thoroughly. Add cooked rice and chopped salantro (to taste) just before serving.

Serving Size: Makes 4 one-cup servings
