Creamy Broccoli Chicken Couscous

Introduction

Easy casserole, especially good for potlucks! Created on the fly with ingredients on hand... would surely be better/healthier with fresh veggies and chicken breasts, but this beggar's no chooser. :) I was only going to calculate for my own information, but it was really tasty so I thought I'd share! Number of Servings: 8

Ingredients

    12 oz bag frozen pepper & onion blend
    12 oz bag frozen broccoli cuts
    1.5 lb boneless skinless thigh fillets
    1 can reduced fat cream of celery soup
    1 can reduced fat cream of broccoli cheese soup
    1 T garlic (I used more... love it!)
    1 T Better Than Boullion, chicken
    Salt/Pepper to taste

Directions

Cut chicken into small pieces and saute with garlic in skillet until cooked through. While chicken cooks, prepare Israeli couscous as package directs, adding Better Than Bullion to boiling water. Add pepper & onion mix and broccoli to chicken. Continue on low heat until cooked to taste. Combine chicken veggie mix with couscous and soups in casserole dish. Bake @ 350 until bubbly, about 30 minutes.
