Leftover Rice squares

Introduction

This is a great way to use leftover rice. It is easy and you can add whatever you want! This is a great way to use leftover rice. It is easy and you can add whatever you want!
Number of Servings: 12

Ingredients

    All measurements are very approximate:

    Cooking spray
    2 cups leftover rice
    2 cups broccoli slaw (optional and you can put whatever veggies in)
    2 eggs
    1 cup of mozzarella cheese shredded
    2 tbsp parmesan

Directions

Serving size - 1 square
Preheat oven to 450

Spray a 9x13 baking pan with cooking spray.
Combine all other ingredients in a large bowl and mix well.
Spoon into the prepared pan and press the mixture down with the back of the spoon.
Bake for 20-25 minutes until crispy. If desired, put under the broiler for a few minutes to brown the top.
Cut into squares and serve.
Delicious!
