Beefy Vegetable Soup

Ingredients

    1 1/2 lb lean stew beef
    1 tbsp canola oil
    4 cups of low sodium beef broth
    1 1/2 cups of water
    2 tbsp low sodium soy sauce
    3 medium potatoes, cubed
    3 medium carrots, cubed
    3 celery ribs, chopped
    2 tbsp worcestershire sauce
    2 tbsp steak sauce
    3 garlic cloves
    1/2 tsp salt
    1/4 tsp dried oregano
    1/8 tsp nutmeg
    1/8 tsp pepper
    2 cups fresh or frozen corn
    1 3/4 cups fresh green beans, chopped

Directions

In a dutch overn, cook beef in oil over medium heat until no longer pink. Add broth, soy sauce and water and bring to a boil. Reduce heat and simmer covered for about an hour.

All everything else except for the corn. Bring to a boil. Reduce heat and simmer for about 30-40 minutes. Or until the vegetables are just tender.

Add corn and bring to a boil. Reduce heat and simmer for 5-10 minutes

Serving Size: makes 9 1-1/2 cup servings
