Introduction

This is my version of a dish my mom makes that, I believe, is a variation of a Dutch Indonesian dish called Bami Goreng. This makes a lot of food that you may have trouble NOT overeating! It sounds like an odd combination but it is so good that everyone I have introduced to it has loved it! I add soy sauce or Pickapeppa Sauce at the table, depending on my mood. ;-) Enjoy! Ingredients

    1 package bacon, diced (I use Hormel Natural Choice Bacon if available)
    12 oz egg noodles
    1 medium onion, diced
    5 cloves garlic, minced
    1 head cabbage, shredded
    5 large eggs
    Salt and pepper to taste
    Soy Sauce or Pickapeppa Sauce (optional)

Directions

1. Fry bacon in extra large skillet. Do not drain.
2. Meanwhile, boil egg noodles to al dente, per package. Drain and set aside.
3. When bacon is almost done, add onion, then garlic. Cook until onion is clear. Do not overcook garlic.
4. Add cabbage and 1/2 cup water. Cover tightly and steam cabbage until tender.
5. Mix cooked noodles and scrambled eggs into skillet.
6. Season with salt & pepper to taste.
