Introduction

I threw this together with some leftover veggies. Turned out pretty good! My daughter and I both thought the concoction was something like what you would find at a mongolian style grill--without all the spices. Next time we will experiment with some spices from the spice cupboard I threw this together with some leftover veggies. Turned out pretty good! Number of Servings: 2

Ingredients

    2 small baked potatoes-cut up into chunks
    1/4 small onion chopped
    6 oz turkey ham chopped into bite size piece
    1 cup spinach
    1 cup shredded cabbage (I used a cole slaw mix)
    3 broccoli spears chopped
    Garlic salt to taste
    2 tbsps olive oil

Directions

Chop up the broccoli and toss in the pan with olive oil Cook until it turns bright green, add onion and potatoes, cook until onion is translucent, and potatoes start to brown on the sides. Add ham and cook until heated through. Add Cabbage saute for a few minutes until just softened. Add the spinach, cook until just softened. Add garlic salt to taste.

Serving Size: Makes 2 servings-about 2 cups of food
