Vegan Gluten Free Chocolate Oatmeal Cookies

Introduction

If you like oatmeal, chocolate, and cinnamon, you may like these. If you like oatmeal, chocolate, and cinnamon, you may like these.
Number of Servings: 80

Ingredients

    3 cups regular oatmeal
    2 15 oz cans of black beans, drained
    4 large, ripe bananas
    1/2 cup honey
    6 tbsp olive oil
    1/2 cup cocoa powder
    2 tbsp cinnamon
    2 tsp vanilla
    2 tbsp baking powder

Directions

1. Use a food processor to cut the oatmeal to powder. Set aside.
2. Use a food processor to puree the black beans, bananas, honey, olive oil, and vanilla.
3. In a large bowl, mix the oatmeal, pureed bean mixture, cocoa powder and cinnamon. Add in the baking powder.
4. Drop onto a cookie sheet in 1 1/2 inch balls, flatten with a fork like peanut butter cookies.
5. Bake at 350 degrees for about 12 minutes.
6. Refrigerate for 4 hours to bring out the flavors.

Serving Size: Makes about 80 small cookies
