IntroductionQuinoa Salad Quinoa Salad
1.5 cups Quinoa (dry)
3 cups water
1/2 cup (80grams) Sun Dried Tomatoes
1/2 cup White Wine Vinegar
2 T Olive Oil
1/4 cup (35g) Pine Nuts, Toasted
Mix remaining ingredients in a small bowl. Pour over cooked quinoa and toss lightly.
Variations: Add roasted red peppers. Sub white wine vinegar with red wine vinegar. May serve over shredded lettuce.
