Roasted Cheddar Cauliflower

Introduction

A little cheese, a little fat, a lot of cauliflower gives you an indulgent side dish that won't kill your calorie count. A little cheese, a little fat, a lot of cauliflower gives you an indulgent side dish that won't kill your calorie count.
Number of Servings: 4

Ingredients

    1 head cauliflower, cored and cut into medium florets
    2 T bacon fat, warmed
    sea salt and ground black pepper
    1 cup cheddar, freshly grated.

Directions

Heat oven to 450. Toss the florets with bacon fat. Scatter on a rimmed sheet pan and season with salt and pepper. cook until tender-about 20 minutes, tossing halfway though. Scoot the cauliflower towards the center of the sheet and top with cheese. Return to oven and melt cheese-about 2 minutes. Toss before serving.

You can play with this a lot of ways-if you don't do bacon fat you can use some olive or vegetable oil, low fat cheese, ect. Even try throwing some broccoli in there-yum!
