Southwestern Omelette with Taco Cheese

Ingredients

4 egg whites (1/2 egg substitute)
1 oz. shredded low-fat taco-style cheese
1 1/2 oz. sliced deli-style ham
1/2 c. diced onion
2 1/4 c. chopped green peppers
1 1/4 c. chopped tomatoes
1/4 c. salsa
1/4 c. kidney beans, rinsed
2 tsp. cornstarch
1 1/3 olive oil, divided
1/2 tsp. minced garlic
1/8 tsp. chili powder
1 tbsp. apple cider
1/2 tsp. chopped cilantro
1/8 tsp. celery salt
salt and pepper to taste
Directions
In a medium nonstick saute' pan, heat 2/3 tsp. of oil. Combine onions, peppers, tomato, salsa, kidney beans, cornstarch, and seasonings. (Mix cornstarch with a little water to dissolve it before adding to pan.) Cook for 5 to 8 minutes, stirring occasionally. In a second saute' pan, heat remaining oil. Using a medium bowl, blend egg substitute, ham, salt, and pepper. Pour into pan and stir to distribute ham evenly. Cook until set. Flip omelette over with spatula and cook another 2 minutes. Place omelette on serving plat and spoon pepper mixture onto half of omelette. Fold omelette over and sprinkle with cheese and serve.
