    1/2 c. diced onion
    2 1/4 c. chopped green peppers
    1 1/4 c. chopped tomatoes
    1/4 c. salsa
    1/4 c. kidney beans, rinsed
    2 tsp. cornstarch

(Mix cornstarch with a little water to dissolve it before adding to pan.) Cook for 5 to 8 minutes, stirring occasionally. In a second saute' pan, heat remaining oil. Using a medium bowl, blend egg substitute, ham, salt, and pepper. Pour into pan and stir to distribute ham evenly. Cook until set. Flip omelette over with spatula and cook another 2 minutes.
