Potato Soup

Number of Servings: 8

Ingredients

    6 medium potatoes
    3 tbsp olive oil
    1 medium onion
    4 cups water
    3 tbsp butter
    2 tsp salt
    1/4 tsp white pepper
    1/4 tsp ground thyme (1 tsp fresh if available)

Directions

Peel and dice potatoes into 1/2 inch pieces. Dice onion and sautee in olive oil in a 3 or 4 quart saucepan. Put diced potatoes, salt, and water to cover about 1/2 inch deep (about 4 cups or so) into pan and bring to a boil. Turn down and simmer covered until potatoes are tender (about 30 minutes). Mash the potatoes slightly with a potato masher or sturdy spoon. Add the remaining ingredients and simmer for about 15 minutes until seasonings blend. Add water to adjust thickness. May be garnished with cheese or chopped chives if desired. Makes 8 generous servings.
