Light, yummy protein waffles

I made several adjustments to a basic soy flour pancake recipe and came up with this one for waffles. These are very light and very yummy. They are great to eat before a run since they are so high in protein and potassium. I make the whole batch and freeze the extra waffles to fix in the toaster another time. Ingredients

2 1/3 C soy flour
2 T + 1/2 t baking powder
1 T truvia (or equivalent no calorie sweetener)
1 t ground cinnamon or other desired spices (opt.)
4 large eggs, separated
3/4 C plain nonfat Greek yogurt
1 2/3 C water
1/4 C melted unsalted butter

Directions
1. Sift together the flour, baking powder, truvia, salt and optional spices into a large bowl; set aside. In a medium bowl, whisk together egg yolks, yogurt, and water until blended. Whip egg whites until very fluffy and stiff.
2. Make a well in the center of the dry ingredients. Pour wet ingredients into the well and stir until just combined. Fold in whipped egg whites. Blend in melted butter.
3. Heat slightly greased waffle iron. When iron is ready spread batter onto iron. (I use slightly more than 3/4 C batter with a waffle iron that makes 2-4" square waffles.)
4. Remove waffles when ready and enjoy. Mine usually takes 3-4 minutes. Top with diced apples, peaches, or pears heated in microwave with some truvia and cinnamon. Or use fresh sweetened fruit (strawberries will add more potassium!).
